Quite beautiful elegance and balanced acidity in this classic Italian sparkling wine.
From steeply sloped south-facing hills, the Adami family produce a range of sparkling wines of recognised quality. Not as overtly fruity in the mouth as the Prosecco Quartese from Ruggeri, this Brut Prosecco has an elegance about it rarely found in this style of wine. Gorgeous!
Tasting Notes
Delicate straw yellow colour in glass. Rich on nose with traces of apple, peach and wisteria. Wonderful balance and elegance complement a pleasurably crisp spiciness. Serve chilled at 7-8C.
Food matching
Ideal as an aperitivo, but also good throughout the meal owing to its crisp acidity. Excellent with all seafood and any light delicate meal.
Winemaking Notes
Grapes: 95% Prosecco, 5% Chardonnay.
Light pressing of the grapes followed by settling of the must and fermentation at controlled temperatures of 18-20C using cultured yeasts. Contact with fine lees in stainless steel tanks for 3 months. Charmat method of secondary fermentation under pressure. Cold tartrate stabilisation. Tight filtration before bottling to remove spent yeast.
