The legend tells that once upon a time, before the creation of Champagne, a red (Pinot Nero) sparkling wine was made, and it tells how often, when the bottle was opened, some of those present had their clothes permanently stained by the overflowing froth that sprayed out of the bottle, causing something of a scene. The legend goes on to tell that one wine-maker, mortified by these accidents and sensitive to the women's complaints, had the idea of making a white wine out of the grapes that would be used to make future sparkling wines.
This imaginative story introduces this much-loved Franciacorta wine which, perhaps derived from a return to the past, makes use of the colour bestowed by the Pinot Nero grape to take on the charming tones of colour that make us instinctively want to drink it.

Winemaking Notes
Soft-pressing of the whole grape with pneumatic presses.
Natural cold sedimentation (vinification of the pinot nero takes place with partial fermentation with the skins).
Fermentation at controlled temperatures (16°-18°C).
Re-fermentation in the bottle with selected yeasts and subsequent refining for a minimum period of 30 months in underground cellars at a constant temperature of between 12° and 14°C.
During dégorgement a quantity of special "Liqueur d'Espedition" is added to each bottle to give this product the sweetness of a demisec.
