A classic Italian white wine from possibly the finest Soave producer. Now matured for a short time in large oak casks, this is an impressive and flavourful wine.

Tasting Notes
Brilliant, straw yellow colour with greenish hints. Delicate nose reminiscent of almond blossoms, cherry blossoms and lilies of the valley. Good depth of fruit and complex on the palate, it has excellent structure and good acidity, soft texture, sapid and balanced.

Matching
Very good with soups and fish, including freshwater fish. Good with vegetable starters.

Winemaking Notes
Grapes: 90% Gargegna, 10% Trebbiano di Soave.
Towards the end of September, the healthy, ripe grapes are harvested by hand, usually in more than one session, to ensure that they have reached their optimum level of ripeness. Trebbiano ripens before Garganega and so is usually picked during the first week of September. Using pneumatic presses the juice is gently separated from the skins. The must is left to rest for a couple of days at low temperature and than is racked and moved into temperature-controlled stainless steel tanks where a very slow fermentation takes place.
The wine is aged for a short period of time in large oak casks, giving it greater weight and depth on the palate.
