Pierpaolo Pecorari regularly wins plaudits for his Pinot Grigio wines from the foremost Italian wine guide, Gambero Rosso. He is a winemaker who stubbornly refuses to conform and his efforts here show that the much-maligned Pinot Grigio is a grape variety which can produce great wines.
Tasting Notes
Coppery yellow; strong peppery breadcrust aroma; other fat aromas full of apricot.
Matching
Fish-based dishes; shellfish; pasta and risotto with vegetable or cheese sauces.
Winemaking Notes
Fermentation in barriques at a temperature of 24-28ºC; malolactic fermentation totally completed; refined on the fine lees for 10 months; rests in bottle for 8 months. It improves over time with a cellaring capability of 8-10 years.
