Tasting Notes
Golden-bright yellow with soft amber reflections;Intense, complex scent of yellow pulp fruit, honey, date, candy fruit and a light touch of vanilla, typical of the original vineyard;sweet and velvety palate, full and with a good structure, persistent and harmonious.

Food Matching
Best with a dessert or for deep meditation. It matches sweet dishes, but also aged or herbal flavoured cheese and patè du foie gras. 
Serve cool at 10-12°C. 

Winemaking Notes
Harvest occurs during the last ten days of September and early October. During the harvesting of Moscato di Terracina, the grapes are carefully selected leaving on the plant only the most beautiful and rich ones which, over-maturing on the plant, are picked up only to make this passito. The grapes are collected in small baskets where they wither for more than two months in a special environment. 
The difficult and slow pressing and derasping are due to its withered grapes, and the fermentation is started after a short crio-maceration.
The must, then, is set in small termo-controlled reservoirs to finish its slow fermenting.
After three months of rest ,a part of the mass is refined in oak barrels to mature for another six months and evolves to attain unique aromas.
Once bottled, the wine rests for three months longer before release to market.
