A fantastic Vin Santo from the historic winemaking area of Carmignano.

This dessert or 'meditation' wine is derived from selected white grapes, mainly Trebbiano, which are dried for several months in the traditional manner on cane matting. The must is then fermented and matured for over four years in cherry-wood, oak and chestnut 100-litre kegs.

Tasting Notes
Intense golden yellow in colour with great depth on the nose - perfumes of dried fruit and candied peel. On the palate it is intensely sweet but balanced by a freshness which prevents it being cloying. Elegant and rich with orange peel and apricot flavours lingering on the long finish.

Winemaking Notes
Grapes: 90% Trebbiano Toscano, 10% San Colombano.
Grapes picked beginning of September and allowed to dry on cane mats high up in a well-ventilated loft until January. After pressing, the must is fermented very slowly in small oak and chestnut casks for at least 4 years. The must underwent successive fermentations and clarifications with natural changes in temperature. After ageing at least 4 years in oak, the wine rests for 6 months in bottle before release.
