Tasting Notes
Full, concentrated nose full of ripe black cherry, jammy blackcurrant and vanilla oak. The palate is medium to full bodied with an excellent concentration of baked black fruits and elements of roasted almonds. Possesses a defining, balancing structure and a firm finish with engaging length.
Matching
An excellent choice to partner most types of game. Try it with carpaccio of duck with olive oil and black pepper, pheasant, quail or a full bodied wild boar and mushroom risotto with plenty of parmesan.
Winemaking Notes
Sourced exclusively from the Rimini region of Emilia Romagna. The vines are planted with a density of 7000 per hectare and trained with the one arm cordeon system on lean soils with a clay and limestone content. Each of the 10 - 40 yr old vines yields just 1kg of grapes. Harvesting is in September and the grapes are destemmed and gently crushed upon reception at the winery before twenty days fermentation in contact with the skins in stainless steel. Malo-lactic fermentation is performed in barrique, where the wine ages for 14 months before bottling with no filtration and a further 12 months in bottle before release. Only 3000 bottles made.
