Ghemme is the name of the town that gives origin to the most illustrious denomination of Novara origin. In the 1800s it was mentioned in the works of  the Italian writer Fogazzaro and appreciated by the Count of Cavour.

Tasting Notes
The colour is a beautifully clear ruby-garnet red.The scent is intense and persistent / lingering, refined and ethereal and reminds us of resin, violets, faded / withered roses and raspberries. Dynamic vitality is expressed through its taste. It is dry and tannic and has a warm body making it pleasant to the palate.

Food Matching
Exalts roasts, braised meats and game.
Serving temperature: 18°C. Serve in large goblets, making sure to oxygenate it.

Winemaking Notes
Grapes are destemmed and then delicately pressed. Fermentation happens at a controlled temperature of 30°C. During fermentation repassing is carried out twice a day until the sugar is completely transformed. After this a submerged hat fermentation follows. 
The wine is then  transferred to oak casks for about 20 months before being bottled. The bottles are then stored horizontally for refining.
