Beautiful long-lasting flavour from this special wine of an oft-denigrated classification. Showing what can be done when good winemaking practices and good vineyard management combine, this famous Italian white wine is at its best here.
Tasting Notes
Straw-yellow colour, floral aromas with warm hints of ripe fruit. A generous, rounded flavour for its type, lingering and very pleasant.

Procanico 50% Grechetto 25% Verdello 25% Pinot Bianco, Viognier & Riesling.
The vineyards cultivated for this wine at Castello della Sala have a particularly low yield per hectare (70 quintals). Special care is taken at harvest time to harvest the grapes just at the correct time when they show good sugar levels and extract. This means that harvest takes place slightly later than average. In order to confer good extract and aromas to the future wine, part is vinified using the system of 'crio-maceration' (i.e. the must remained in contact with the skins for about 6 hours at a low temperature of 5°C). The must obtained from this criomaceration is then added to the must obtained from direct pressing of the grapes, and introduced into stainless steel tanks where alocholic fermentation takes place at a particularly low temperature (not exceeding 16°C). The wine is then stored in temperature controlled stainless steel tanks until bottling.
