Aglianico is this young winery's speciality and this is their eponymous wine: Selvanova. From vineyards on south-facing slopes at around 200 metres above sea level in the area of Castel Campagnano in Caserta province in the north of Campania region.

Tasting Notes
Aroma of ripened fruit, plums, wild berries, tobacco. In the palate is incense, ash, oriental spices and minerals. Heavy bodied and well rounded with fine tannins and velvety texture.

Food Matching
Roasts, wild boar sausages, game, grilled mushrooms, mature cheeses such as Gorgonzola and Stilton.

Winemaking Notes
Grapes are object of a very strict selection, therefore the production is less than 1kg per vine. Harvest at end of September. Maceration time of 12 days; controlled fermentation at less than 30C; malolactic fermentation in barriques. 18 months of barrel ageing in new French oak barriques. Wine is left unfiltered and rests in bottle for a further 6 months before release to market.
