Award winning wine:
One Glass, Gambero Rosso 2007

Tasting Notes
Ruby red wine with garnet reflections. Intense to the nose, a sharp profound perfume, with rich aromas of mature fruit. In the mouth it is round, soft, with tannin extracts, extremely well calibrated. A smooth, delicate flavour with a full body, and a strong persistent finish.

Food Matching
Its elegance is best matched by decisive dishes, red meats or wild herbs. Best served at room temperature; uncork and allow to breathe for at least an hour, before serving.

Winemaking Notes
85% Sangiovese, 15% Merlot in accordance with the disciplines of production. High density of vines per hectare, low production per vine.
Maceration for 20-25 days in vertical vine-makers; fermentation controlled at 25°C in the vine-maker and completed in stainless steel tank.
The slow gentle control of the pneumatic press with an axial membrane respects the integrity of the grapes, consequently enhancing the organoleptic properties of the wine.
Refinement in French oak barrels for a period of eight months and for another fourteen months, additional in-bottle refinement.
