SALAMINO DELLE LAME comes from the vines of Lambrusco Salamino di S. Croce DOC, native to the area to the North of Modena, between Carpi and the Panaro River. Its name refers to the area of origin, furrowed in the past by canals (lame).
Tasting Notes
It is a deep purple-red colour with a bright hue. Of a strong and remarkably typical intensity, a very rich and long lasting flavour of wild fruits of blackberries, blueberries and forest berries. Richly charged with an optimal tannic structure, a long lasting taste refreshed by a lively acidity and balanced by the rich body. Small and lively perlage.
Matching
The first natural match is with all salami typical of this area of Italy: culatello, prosciutto, mortadella, salame.
For its qualities as a light wine of fragrant and pleasant effervescence, it ideally complements the typical Emilian cuisine, of which it dissolves the weight and richness of the fats. On the other hand, it has shown itself to be an excellent accompaniment to lighter meals, snacks and informal convivial occasions, more in line with present dietary criteria.
This is a really interesting wine: try it with a salami sandwich as a snack in the afternoon or with a typical dish of the rich cuisine from Emilia, such as lasagne, and you will get the most of it, because its effervescence will light them up.
The optimal serving temperature is 10-12°C (50-54°F).
Winemaking Notes
Processed by means of natural refermentation in large, closed containers (Charmat Method) for at least 6 months.
