Quartese was originally the 4th part of the tax which the landowner collected in produce from the workers; this 4th part of the harvest was handed over to the church and it was customarily collected from the best bunches of grapes.  Ruggeri has given the name Quartese to its Prosecco Brut in memory of this ancient custom and to emphasise the care given to choosing the best grapes for its production.

Tasting Notes
Streaked with a persistent perlage of minute bubbles, this is an elegant wine with an appley bouquet on a floral background and a dry, fresh palate with good length and a pleasantly fruity finish.

Matching
Enjoyable on its own or with oven-poached fish in olive oil, warm asparagus and prosciutto salad or Thai spices shrimp salad with Asian greens and pesto dressing for example.

Winemaking Notes
Prosecco 95%, Perera 3%, Verdiso 2%
White vinification, that is to say without the skins, at a controlled temperature of 20 degrees C. The sparkle is added through slow refermentation in large sealed tanks at 12-14 degrees C, remaining with the yeasts for approximately three months before bottling.
