This is a famous old wine from the shores of Lake Bolsena near the town of Montefiascone to the NE of Rome. So good, they named it thrice!
Questionable legend it may be, but the curious name of this wine is said to derive from mediaeval times. Supposedly, a German bishop by the name of Defuk sent his scout ahead of him to find the best hostelry in the town of Montefiascone prior to his arrival. The good scout was so enamoured of the wine available in one hostelry that he managed to scribble Est! Est!! Est!!! on the outside wall before, presumably, "seeking rest" nearby.
The bishop obviously agreed with his scout's assessment and stayed awhile. The tomb of the German bishop can be found in the local church of San Flaviano.
Tasting Notes
Straw coloured, light fruit bouquet with pleasing light fresh flavours of pear and melon.
Matching
Great as an aperitif to freshen the palate or as an accompaniment to white fish dishes.
Winemaking notes
Grapes: 60% Trebbiano, 30% Malvasia, 10% Roscetto.
Vinified only in steel vats, winemaking brothers Riccardo and Renzo Cotarella have produced a light fresh blend from a selection of local grape varieties.
