A marvellous exhibition of the winemaker's art by this excellent winery near Rome. This is a wonderfully structured and fragrant white.

Tasting Notes
Straw-yellow colour with light golden reflections; intense and elegant perfume with hints of banana, pineapple, honey and vanilla; dry, full taste with a great structure, pleasantly refreshing, with a long finish.
Matching
Fish and white meat dishes; good also with medium and mature cheese.
Winemaking Notes
Late harvest to allow the grapes to over-ripen. After a cold maceration of 24-36 hours, the grapes are gently pressed and the must keeps fermenting at controlled temperatures. When the fermentation is complete, the wine is decanted in small stainless steels vats for about 3 months. It is subsequently refined in small oak barrels for about 6 months. It is then bottled and left to rest for about 3 months before it is ready for the market.
