Superb red wine from indigenous Sicilian grape varieties.

COS is a winery setup in 1980 by three former schoolfriends one of whom, Giusto Occhipinti, describes the resulting wine thus:
"Our goal isn't to make wines that impress the critics, but to make wine that expresses our great terroir. Here, Nero d'Avola is more elegant than in other regions and has these great mineral notes from the soil. This is what gives the Cerasuolo di Vittoria its rich fruit, while the Frappato gives the wine its floral components and freshness."

This wine is made in the usual winemaking method of fermentation in steel, followed by maturation in wood. COS winery also makes a wine called "Pithos" from the same grape varieties, which is fermented in terracotta amphorae for about 6 months. For details of availability, please Contact Us. This, I believe, is a finer wine than Pithos but I won't dissuade the curious! (GP)

Tasting Notes
Fantastic red fruits show through here. Dark in the glass, vibrant red berries on nose and in mouth, with some spicy hints and deeper blackberry and plum notes on the long finish. Gentle tannins for ageing.

Winemaking Notes
Grapes: 40% Frappato, 60% Nero d'Avola.
Fermentation occurs in stainless steel vats with temperatures rising to 30-33C. Aged for between 18 and 24 months in oak barrels. Bottled unfiltered.
