This wine represents Soave’s highest and finest quality level.
The Calvarino vineyard is the original nucleus of the family homestead, where the traditional varieties - Garganega and Trebbiano - are grown. Due to the difficulty of working in this sloping, almost inaccessible vineyard, it earned the name Calvarino meaning "little cavalry". The soil is volcanic in origin: rich in basalt and Tufa.
Tasting Notes
Pale straw yellow colour, with greenish reflections when young turning golden with ageing. Aroma is fresh and flowery, with notes of elderberry and cherry. Lively, crisp and fruity, complex on the palate, with neat and well-balanced, crispy lemony apple flavours. Tremendous length and finesse.
Matching
It matches a great variety of dishes, and is ideal with vegetable terrines, cheese soufflès and delicate fish dishes.
Winemaking Notes
Grapes: 70% Garganega, 30% Trebbiano di Soave.
Grapes harvested over two or three sessions for optimum ripeness of the fruit. Gentle pressing of the grapes prior to fermentation in steel vats at a controlled temperature of 19C. At its best two years after harvest and will cellar well.
