Ingredients
1 aubergine
1 yellow pepper
1 red pepper
1 green pepper
2 medium onions
4 courgettes
20 cherry tomatoes
salt
olive oil
parsley
Method
Chop the aubergine, sprinkle with salt and place in a drainer, to let them water for an hour. Wash and chop all the remaining vegetables. Preheat the oven to 200ºC.
Place all the chopped vegetables in a baking dish and sprinkle with salt and plenty of olive oil. Bake for about 50 minutes. Turn on the grill for the last 5-10 minutes.
Serve on the side of white meat, fish or frittate.
