Uova in Salsa di Tonno (Eggs in Tuna Sauce)

Ingredients
4 eggs
1 can of tuna fish
1 tbsp of capers
light mayonnaise
anchovies and black olives (optional)
Method
Boil the eggs until hard (10 minutes from cold water). When cool, peel and cut in halves lengthwise. Blend the mayonnaise with the drained tuna and the capers. If the sauce is too thick, add a few tbsp of vegetable stock to dilute. Place the halved eggs on a serving dish, spoon on the sauce and decorate with a few capers, black olives and anchovies, if you like them!
