cucumbers
carrots
fennel
celery sticks
peppers
radishes
cherry tomatoes
spring onions (and all the raw vegetables you can think of)
For the dip - extra virgin olive oil, salt and lemon juice or balsamic vinegar or apple vinegar
Method
Slice all the vegetables into small sticks, except for the radishes and the tomatoes which need to be left whole. Put all the vegetables in a serving dish, mixing colours and shapes. Prepare a small bowl for each guest with olive oil, salt and vinegar.
