Ingredients
6 artichokes
2 spring onions
2 blood oranges
1 lemon
A cup of vegetable broth
Saffron
Olive oil
Rosemary
Method
Clean the artichokes, cut them in 8 and soak them in water and lemon. Finely chop the onions. Peel the oranges and remove the seeds.
Slightly pan fry onions and artichokes in olive oil and then add the broth. Cook on a very low heat with a lid on the pan. When the artichokes are cooked add the saffron.
Serve the artichokes with some orange segments and garnish with rosemary.
