1kg potatoes
150g onions
250g tomatoes
150 olives
50g capers
6 anchovies
salt
olive oil
Method
Boil and mash the potatoes, adding 1 tbsp of olive oil and a pinch of salt while mashing. Chop then pan-fry the onion with a little olive oil, add the chopped tomatoes and cook for about 15 minutes. In an oiled oven dish place half of the mash potatoes then add the tomatoes, anchovies, capers and olives. Cover with the remaining mashed potatoes and sprinkle a little olive oil. Put in a pre-heated oven at 200° and cook for 20 minutes.
