Ingredients
600g lentils
1 red onion
2 garlic cloves
10 ripe cherry tomatoes
1 courgette
basil
chilly
olive oil
1 tsp of bouillon powder
Method
Place the lentils, the halved tomatoes, the courgettes cut in little cubes, the finely sliced onion and garlic in a pot and cover with water. Add a tsp of bouillon powder and bring to the boil. Boil for about 30-35 minutes, stirring every now and then. Take off the heat, then add the olive oil, a little chilly and basil leaves. Serve hot with wholemeal bread or bruschette.
