2 Glasses, Gambero Rosso 2008

You won't miss champagne: fine structure and elegantly mellow, this is the expression of Lombardy's Franciacorta sparkling wine. From appetisers to main courses, Italy's finest bubbles...

Tasting Notes
Complex and faithful, these are the appreciable features of this Franciacorta wine. The knowing balance of bubbles, body and elegant aromas arouse the palate with the sensations of an exceedingly pleasant and eminently drinkable wine.
Its faithfulness, for most people, is exhilarating. It keeps its promise. It does not betray the expectations of the aromas perceived by the nose; it gives the palate all the very best that it can expect, enriching the sensorial experience with a light final play of bitter/sweet/acid sensations in perfect harmony.

Matching
Excellent as a special aperitif and throughout the meal.
A wine for every occasion, there are endless opportunities to uncork a bottle. Before the meal as a generous and pleasing aperitif, it does not disdain to accompany hors d'oeuvre and first courses.
For those who love elegant sparkling wines in a visceral way we recommend "sinning" with second courses as well.

Winemaking Notes
Soft-pressing of the whole grape with pneumatic presses.
Natural cold sedimentation.
Fermentation at controlled temperatures (16°-18°C).
Re-fermentation in the bottle with selected yeasts and subsequent maturing for a minimum period of 30 months in underground cellars at a constant temperature of between 12° and 14°C.
