Cavalchina is the name of the area where the winery has been built and is probably named after the old residence of the Count Cavalchini.The estate is in the south east of the Garda amphitheatre which has long been a wine producing area. Cavalchina was a battleground during the first and second Wars of Independence in the late 19th century. Evidence of the Battle of Custoza in 1866 is a stone obelisk near the entrance to the Cavalchina estate, which indicates that Prince Amedeo of Savoy was wounded there. The estate was established at the beginning of the 20th century when the family bought the first vineyards. The most important aspect of Azienda Agricola Cavalchina is that in 1962 it was the first producer to put Custoza on the label as the name of the wine from the region. They are now recognised as the foremost quality producer of Bianco di Custoza wines.

In 1848, during the period of Hapsburg domination of this region to the south east of Lake Garda, Cavalchina was mapped out as having vineyards of both first and second class categories. This classification included factors other than the quality of each wine, such as the various terroirs in the region and in particular the excellent glacial soils and the resistance to hot and cold climates.

The estate was established at the beginning of the last century when the family bought the first vineyards.Later, in 1948, the cellars were built initially as a grappa distillery and were used as such until 1967. Azienda Agricola Cavalchina was the first producer to put Custoza on the label as the name of a white wine from the region made with Fernanda, Trebbiano and Garganega grape varieties.

We grow the grapes with a view to concentration of flavour and to emphasise the characteristics of each grape, but without changing them. The task in the cellar is to follow rather than impose evolution: it is this that inspires our wines. We make wines to accompany food in as simple a way as possible.
Quite modest, as La Cavalchina is now recognised as the foremost quality producer of Bianco di Custoza wines.
