Ingredients
mushrooms
glass of white wine
3 tbsp of cream (or alternatively coconut milk or rice milk)
1 tbsp of olive oil
fresh finely chopped parsley
a cup of vegetable broth
a red onion
Method
Finely slice the onion and put it in a pan with the olive oil. When the onion is soft, add the mushrooms and the broth. Simmer for a while, then add the wine, let it evaporate a bit and then add the cream. Let it cook until the mushrooms are soft. Add the fresh parsley and serve.
