Ingredients
1 sea bass
40g butter
½ lt red wine
100g mushrooms
2 shallots
1 carrot
parsley
salt and pepper
Method

Put the sea bass in a pot with the chopped shallots, parsley, mushrooms, carrot, salt, pepper and half the butter. Cover with a lid and cook on a very low heat for a few minutes. Pour the wine into the pot, trying to soak only the bottom half of the fish. Add the remaining butter, cover and keep cooking very slowly for about 30 minutes or until the sauce is thick enough. Serve.
