Ingredients
800g turkey joint
50g cream
½ glass dry white wine
2 oranges
1 onion
celery
carrot
flour
30g butter
olive oil
salt and pepper
Method
Tie the meat with a string. Put the butter with 2 tbsp of olive oil in a pot and slightly fry the chopped onion, celery and carrot. Add the meat to the pot, turning occasionally.
Peel the oranges and boil some of the peel.
When the turkey is golden, add the wine and the juice of the oranges. Add the boiled peel. Add salt and pepper. Put the lid on the pot, cook on a low heat for about one hour. When the meat is cooked, slice it and put it on a serving dish. Add some boiling water to the sauce used for cooking the meat. Thicken it with a bit of flour and the cream. Add pepper. Pour the sauce over the turkey slices and decorate the serving dish with orange slices.
