Ingredients
4 beef fillets
4 pancetta slices
2 tbsp concentrated broth
flour
Amarone wine
14gr pine kernels
olive oil
salt and pepper
Method
Flour the fillets and wrapped them with the pancetta slices. Heat 2 tbsp of olive oil in a pan and brown the fillets on a high heat. Move the meat on a dish a keep warm. Get rid of the used oil , re-place the fillet in the pan with the broth and the wine. Cook for about 10 minutes on a low heat. Add salt and pepper. Toast the pine kernels. Remove the fillets from the pan and place on a serving dish, covered with its sauce. Decorate with the pine kernels.
