Ingredients
320gr rice
60gr grated parmesan cheese
100gr onion
40gr butter
50gr olive oil
1lt broth
½ bottle of Amarone
Method
Heat the amarone wine.
In a pot heat half the butter and the oil and brown the onion, finely chopped. Add the rice and cook on a medium heat, stirring constantly. Slowly add half of the wine, cook and add the broth ladle by ladle. When the wine is almost cooked, add the remaining Amarone. When the wine is cook, add the remaining butter and the cheese and stir well. Leave the rice to rest for a couple of minutes and serve.
