Stracotto all'Amarone (Overcooked Beef with Amarone)

Ingredients
800gr beef;200gr flour1 bottle Amarone della Valpolicella;2 onions, 2 carrots, 1 celery stick; 20gr minced bacon;1 bay leaf;3 tbsp olive oil;salt and pepper
Method
Chop the beef in little cubes and pass in flour. Heat the oil in a pot and add the chopped onions, carrots and celery. Slowly pan-fry. Pour the meat and let it brown. Pour the wine with the bay leaf. Add salt and pepper. Close the pot with a lid and keep cooking on a very slow heat. The meat needs 4 hours cooking. If the liquid evaporates completely, add ladles of hot broth. Cook the last ½ hour without the lid. Serve with polenta or mashed potatoes.
