Ingredients
12 quails
12 parma ham slices
chive
1 leek
truffle
3 glasses of Franciacorta
olive oil, salt
Method
Wash and prepare the quails. Wrap them with a parma ham slice, closing the wrap with a toothpick. Put 3 tbsp of olive oil in a pan and pan-fry the quails for a few minutes. Pour the Franciacorta and let it evaporate. Add the chive, the leek and the truffle finely sliced.
Cook for about 20 minutes on a medium heat.
